Grilled Chicken Breast With Oriental Marinade

Just a nice way to cook chicken.

Ingredients

  • light soy sauce
  • mustard powder
  • clear honey
  • cm piece fresh ginger, Peeled and grated
  • medium onion, Peeled and grated
  • arlic cloves, Peeled and crushed
  • star anise, crushed
  • chicken, cut into 8 pieces
  • salt and pepper, to taste

Instructions

  1. Mix the soy sauce and dry mustard powder together in a china or glass container to form a marinade. Add the honey, ginger, onion, garlic and star anise to the soy sauce mixture and leave to stand for at least 8 hours.
  2. When complate, coat the chicken with the mariande and leave for at least 1 hour, turning occasionally and basting.
  3. When ready to cook, sprinkle salt and pepper to taste over the chicken and grill or barbeque for 5-6 minutes.
  4. While the chicken is cooking, put the rest of the marinade in a saucepan and bring to the boil.
  5. Turn the chicken over and cook for a further 5-6 minutes, basting with the marinade occasionally during the cooking.
  6. Note: Makes an excellent all-round low-fat marinade for lamb, pork and fish steaks.

Real Cheeseburger Mac Skillet

I was kind of appalled by how many cheeseburger mac recipes called for boxed macaroni and cheese so I threw this one together tonight and it was out-of-this-world delicious! Give it a try!

Ingredients

  • ground beef
  • /2 onion, chopped
  • /2 cup green pepper, chopped
  • /2 cup red pepper, chopped
  • garlic powder
  • onion powder
  • fresh oregano
  • /2 cup elbow macaroni, uncooked
  • water
  • beef bouillon cube
  • Worcestershire sauce
  • ketchup
  • cheddar cheese, shredded
  • salt and pepper

Instructions

  1. Brown beef with onion and peppers.
  2. Season with garlic powder, onion powder and oregano.
  3. Stir in dry macaroni, water and boullion cube.
  4. Combine Worcestership and ketchup.
  5. Allow to simmer until the macaroni is cooked through, adding more water if neccessary.
  6. When done, remove from heat and stir in cheese.

Grilled Duck Breast With Prickly Pear Bbq Sauce

Ingredients

  • chili sauce
  • ketchup
  • prickly pear jelly
  • /4 cup honey
  • /2 teaspoon liquid smoke
  • chili powder
  • dry mustard
  • black pepper
  • paprika
  • granulated garlic
  • salt
  • maple leaf farms boneless duck breasts, 5-6 ounces each
  • as needed vegetable oil

Instructions

  1. Combine BBQ sauce ingredients; simmer for one hour. Cover and place in refrigerator until cold, about 2 hours. Reserve 1 cup of BBQ sauce for basting.
  2. Pour remaining BBQ sauce over duck breasts. Marinate covered in the refrigerator for 1/2 hour. Turn breasts over; marinate for 1/2 hour more. Remove breasts; discard marinade.
  3. Preheat grill. On a well oiled grill, cook duck, skin side down, 7 minutes. Flip breast over, cook 3 minutes. While grilling, baste with reserved sauce. If needed, finish cooking in a 350°F oven to bring internal temperature to 155°F.
  4. Let duck breast rest 2 minutes. Slice duck breast across the grain. Fan slices on plate. Serve with cilantro garlic potato puree and green chile black beans. Garnish with parsley and habaneros.

  6. Add ground chuck,stirring to crumble.

  9. Uncover and simmer 30 minutes or until beans are tender and mixture has thickened.

Chicken Stir Fry With Ginger Peanut Sauce

  • soy sauce
  • peanut butter
  • white wine (or rice wine vinegar)
  • brown sugar
  • ginger, minced
  • /2 teaspoon hot pepper sauce
  • peanut oil
  • /4 lb chicken breast, cut into strips
  • medium carrots, sliced
  • red pepper, cut into bite size pieces
  • yellow pepper, cut into bite size pieces
  • snow peas, trimmed

Instructions

  1. In a small bowl, stir together the soy sauce, peanut butter, white wine, brown sugar, ginger, garlic and hot pepper sauce. Set aside.
  2. In a wok or large skillet heat oil. Add chicken and stir fry for about 3 minutes. Add carrots and stir fry 2 minutes. Add peanut sauce, peppers and snow peas.
  3. Stir fry until vegetables are tender but still crisp and thicken is cooked through, about 2 minutes.

  • fully cooked kielbasa or 1 lb Polish sausage, cut into 1/2-inch slices

  • cream of celery soup, undiluted
  • /2 teaspoon dried basil
  • /4 teaspoon dried thyme
  • /4 teaspoon pepper
  • frozen chopped broccoli, thawed
  • sliced mushrooms, drained

Instructions

  1. In a large skillet, cook sausage and onion in oil until onion is tender; drain. Combine the water, soup, basil, thyme, and pepper; add to skillet.
  2. Stir in the broccoli and mushrooms. Bring to a boil. Stir in the rice. Cover and remove from the heat. Let stand for 5-7 minutes or until rice is tender. Sprinkle with parmesan cheese.

Grilled Mojito Lime Pork Chops

Ingredients

  • (1 ounce) package McCormick® Grill Mates® Mojito Lime Marinade
  • /4 cup olive oil
  • /4 cup fresh lime juice

  1. Mix Marinade Mix, oil, lime juice and water in small bowl. Reserve 2 tablespoons marinade for brushing. Place pork chops in large resealable plastic bag or glass dish. Add remaining marinade; turn to coat well.

  • chicken wings
  • /2 cup butter, cubed
  • /2 cup louisiana style hot sauce
  • /4 cup balsamic vinegar
  • /4 cup soy sauce
  • brown sugar
  • honey
  • celery seeds, plus
  • celery seed, divided
  • lemon juice
  • /3 cup all-purpose flour
  • paprika
  • cayenne pepper
  • /2 teaspoon garlic powder

Instructions

  1. Cut wings into three sections; discard wing tip sections. In a large saucepan, bring the butter, hot sauce, vinegar, soy sauce, brown sugar, honey, 2 tablespoons celery seed and lemon juice to a boil. Reduce heat; simmer, uncovered, until reduced by half.
  2. Meanwhile, in a large resealable plastic bag, combine the flour, salt, paprika, cayenne, garlic powder and remaining celery seed. Add wings, a few at a time, and shake to coat.
  3. In an electric skillet or deep fat fryer, heat oil to 375. Fry wings, a few at a time, for 6-8 minutes or until no longer pink, turning once. Drain on paper towels. Place in a large bowl; add sauce and toss to coat.

Polish Sausage In Tomato Sauce (Kielbasa W Sosie Pomidorowym)

Juicy Pork Chop Marinate

Give your pork chops a juicy marinate that you can prepare in minutes!

Ingredients

  • boneless pork loin chops
  • /2 cup olive oil
  • soy sauce
  • steak seasoning

Instructions

  1. Mix olive oil, soy sauce and steak seasoning ingredients in a small bowl and pour into a one-gallon resealable plastic bag. Add the pork chops and set the bag in a baking dish in a way that the pork chops get a healthy dose of the marinade (it may be advantageous to flip the bag over halfway through the marinating time). Marinate in the refrigerator for 3-8 hours (no more than 8).
  2. Heat the grill to medium and grill the chops 6-8 minutes per side (depending on how thick they are) until they are no longer pink in the center. Remove the chops from the grill and tent them with foil and allow them to rest for 5-7 minutes. Slice the chops in 1/4 to 3/8 inch slices across the grain and serve.

Simple Hamburger Helper

  1. In a large pot cook pasta according to package directions until almost ready, drain water.
  2. Fry hamburger until it is no longer pink.
  3. Mix hamburger in to the pasta. Add soup, milk and green pepper until well blended.

Red Clam Sauce For Pasta

  • garlic, minced
  • minced celery
  • reen bell pepper, seeded and minced
  • onion, minced
  • (5 ounce) cans baby clams, drained and chopped
  • tomato-based pasta sauce (homemade or your favourite from a jar)

Instructions

  1. In a heavy saucepan, heat oil over medium heat and cook garlic, celery, green pepper and onion, stirring often, until tender; this will take about 10 minutes.
  2. Stir in clams and tomato sauce, and bring to a boil.
  3. Reduce heat and simmer, for only a few minutes, just to let flavours blend.
  4. Serve over hot pasta; linguine is recommended.

Spicy Fried Pollock

  • /2 cup flour
  • /4 teaspoon cayenne pepper

Instructions

  1. Combine egg and milk.
  2. Then spread flour, cayenne and cheese on a plate.
  3. Season each fillet with salt and pepper.
  4. Dip fillet in egg mixture, then in flour mixture, then in corn flakes.
  5. Place on a baking sheet lightly sprayed with nonstick cooking spray.
  6. Bake at 450°F, 10 minutes per 1 inch fillet or until fish flakes easily when tested with a fork.

Mild And Creamy Macaroni And Cheese

Ingredients

  • elbow macaroni
  • /4 cup butter

  2. Cook macaroni and drain.
  3. Melt butter in pan.

  7. Reduce heat and stir in 1 1/2 cups cheese.
  8. Add macaroni.

Ingredients

  • plum tomato, peeled and chopped
  • fresh basil, chopped or 1/4 teaspoon dried basil
  • eggs or 2 egg substitute

  • garlic, minced

Instructions

  1. Combine the tomato and basil and set aside.
  2. Beat the egg, water and garlic together.
  3. Heat oil (or use non-stick cooking spray), add the egg mixture.
  4. Cook and stir gently until the egg is nearly set.
  5. Sprinkle with paprika.
  6. Add the tomato mixture and the pepper.
  7. Cook and stir until the egg is completely set and the tomatoes are heated through.

Quickie Chickie Ole

This is a fast, easy and flavorful chicken entree. I use McCormicks brand of chipotle chili powder. The ingredients as listed produce a mild flavored dish. Add more chipotle and use a hot salsa for a spicier dish.

Ingredients

  • boneless skinless chicken breast, frozen
  • /4 teaspoon dried chipotle powder
  • /4 cup picante sauce
  • /8-1/4 cup monterey jack cheese, grated
  • reen onion, sliced, to taste

Instructions

  1. Preheat oven to 375 degrees.
  2. Sprinkle chicken breast with chipotle powder.
  3. Bake about 15 minutes.
  4. Top with picante sauce.
  5. When almost done (about 10-15 minutes) sprinkle with cheese and top with green onions.
  6. Return to oven until cheese melts, about 3-5 minutes.

Mediterranean Chicken Pitas

Ingredients

  • whole wheat pita bread
  • /4 cup olive oil
  • boneless skinless chicken breasts
  • salt and pepper, to taste
  • tomatoes, diced

  • red bell pepper, sliced
  • yellow bell pepper, sliced
  • feta cheese, crumbled
  • ettuce, for garnish
  • olive, for garnish
  • fresh lemon juice

Instructions

  1. Stir fry chicken and peppers in olive oil until done; cut into slices and set aside.
  2. Mix tomatoes, cheese, lemon juice and olive oil together. Season with salt and pepper.
  3. Place lettuce in pitas, add chicken/pepper mixture, top with tomatoes/cheese/oil sauce.
  4. Garnish with olives and enjoy.

Veal Capellini

This is a my favorite pasta which is quick and easy to make. I am posting the quick version which uses a regular pasta sauce(I "do not" suggest Ragu or Prego)

Ingredients

  • veal, sliced thin into small pieces
  • reen pepper, sliced
  • onion, sliced
  • of fresh minced garlic
  • olive oil
  • basil
  • oregano
  • fresh parsley, chopped
  • salt
  • black pepper
  • angel hair pasta

Instructions

  1. Boil water for pasta. Cook pasta for 5-8 minutes (until desired tenderness), drain and set aside.
  2. Cut onion and pepper into 1-2 inch thin slices. Heat 1 1/2 tablespoons of olive oil in pan. Saute onions and peppers until browned. Add rest of olive oil and veal slices, saute until veal is cooked through. Drain.
  3. Heat marinara sauce on medium heat in a medium sauce pan. Add veal, onions and peppers into sauce and continue to heat. Add basil, garlic, oregano, parsley, salt, and pepper to sauce and heat while stirring until hot.
  4. Top angel hair pasta with veal sauce and enjoy.

Mouthwatering Potato Pancakes With Dill

Ingredients

  • potatoes, peeled and grated
  • eggs
  • cracker meal
  • onion, grated

Instructions

  1. Mix together the eggs, cracker meal, onion, salt, and dill.
  2. Set aside.
  3. Squeeze the grated potatoes in a clean towel.
  4. until dry.
  5. Add to the mixture.
  6. Heat a light coating of oil in a heavy flat bottomed pan or griddle.
  7. Pour 2-ounce ladles of the mixture to the hot oil and flatten a bit.
  8. Brown on both sides (about 2-3 per side).
  9. Serve warm.

Gremolata Crusted Salmon Pasta Bake

Italian gramolata is an aromatic mixture of parsley, lemon zest and garlic.

Ingredients

  • dried pasta shapes
  • milk
  • salmon fillet, skinned
  • cheese sauce, bought
  • capers, drained and rinsed
  • arlic cloves, chopped
  • emon, zest of, Finely grated
  • flat leaf parsley, chopped

Instructions

  1. Method.
  2. Preheat the broiler to medium. Cook the pasta according to pack instructions.
  3. Heat the milk in a frying pan until bubbling, add the salmon and a little seasoning, and cover with a lid.
  4. Cook gently for 6-7 minutes or until just cooked through. Using a slotted spoon, transfer to a plate and keep warm, reserving the milk in the pan.
  5. Pour the cheese sauce into the frying pan and add the capers. Cook gently, stirring until very hot.
  6. Drain the pasta and add to the pan. Flake the fish into the pan.
  7. Toss the ingredients together until combined then tip into a shallow, heatproof dish.
  8. Mix together the garlic, lemon zest and parsley, and add the breadcrumbs.
  9. Scatter over the pasta bake and broil for 1-2 minutes until the breadcrumbs begin to colour. Serve with steamed green beans.

Spicy Potato Rice

A hot and spicy one dish meal. My daughter's favourite.

Ingredients

  • basmati rice
  • /4 cup sliced onion
  • potato, cut into 1/2 inch cubes
  • yoghurt
  • /2 cup tomatoes, chopped
  • cumin seed
  • cardamom pods
  • 3 cloves
  • /2 inch cinnamon stick, a thin 1/2inch piece sticks
  • /2 teaspoon garam masala
  • turmeric powder
  • /4 teaspoon chili powder
  • butter
  • vegetable oil

Instructions

  1. Wash the rice and strain.
  2. In a pan melt butter. Add one by one the following: cumin seeds cardamom cloves and cinnamon.
  3. Next add 1/2 of the sliced onions and saut0233 for 3 minutes.
  4. Add rice and fry for another 2 minutes.
  5. Add 2cups of water and one teaspoon of salt and bring to a boil.
  6. When it starts to boil reduce to low heat cover and cook for 10 minutes.
  7. In the meantime in another pan, heat the oil and add the rest of the onions and fry.
  8. When the onions are soft add the tomatoes and yoghurt.
  9. Fry till the tomatoes are soft.
  10. Add potatoes and all the spice powders one by one.
  11. Add enough salt and fry the potatoes till lightly brown.
  12. Sprinkle a few drops of water cover and cook till the potatoes are done.
  13. When the rice is done fluff it lightly and allow to cool.
  14. Let the potatoes cool too.
  15. When cool, mix the potatoes and rice nicely coating the rice grains with the spices from the potatoes.
  16. Garnish with coriander leaves and serve.

Easy And Fast Bacon Fried Rice

This recipe came from a family friend and has been a "go to" weeknight meal since my husband and I were first married. Now our kids love it! I usually serve this with some fresh fruit and muffins.

Ingredients

  • cooked white rice, cold
  • bunch green onion, sliced thinly
  • thick bacon, cut into bite sized pieces
  • eggs, lightly beaten

Instructions

  1. In a large wok or high sided skillet, cook bacon over medium high heat until done.
  2. Remove bacon from pan with a slotted spoon and set aside to drain on paper towels.
  3. Add green onion to bacon grease and cook until tender and slightly translucent.
  4. Add rice to pan and cook until rice is very lightly brown and cooked throughout.
  5. Push rice to the sides and add egg into center of pan.
  6. Quickly scramble cook eggs.
  7. Push rice back into center of pan and mix all thoroughly.
  8. Season with soy sauce to taste.

Light and fresh, this is perfect when you are craving pizza, but don't want the heaviness of greasy meats.

Ingredients

  • ball of refrigerated pizza dough
  • cornmeal
  • olive oil
  • mushroom, sliced
  • small onion, sliced thinly
  • zucchini, sliced into thin rounds
  • parsley
  • /4 teaspoon oregano
  • arlic cloves, minced
  • mozzarella cheese, grated
  • cheddar cheese, grated
  • /4 cup parmesan cheese, grated

Instructions

  1. Lightly drizzle large pizza pan with olive oil, then sprinkle with cornmeal.
  2. Roll out dough to desired thickness and arrange on pan.
  3. Mix all vegetables in a bowl with a spritz of olive oil, garlic and spices.
  4. Layer over dough and sprinkle on cheeses in order listed.
  5. Bake at 375 until crust is golden brown.

Garlic-teriyaki Chicken Wings

I whipped these little guys up since we were craving chicken wings from our favorite local restaurant. We didn't want to drive the 10 miles there - so I came up with this recipe with ingredients we had on hand. My fiance swears they are better than any we've had; and I have to agree!!!

Ingredients

  • chicken wings, separated
  • coarse salt
  • /2 cup butter
  • light corn syrup
  • soy sauce
  • brown sugar
  • /2 teaspoon dry mustard
  • /8 teaspoon cayenne pepper
  • arlic cloves, minced
  • /2 tablespoon fresh ginger, pressed and minced

Instructions

  1. Heat butter, soy sauce, corn syrup, brown sugar, dry mustard, cayenne, garlic and ginger until butter and brown sugar melt. Cool and set aside in large bowl.
  2. Heat oil on high heat until it hisses when splashed with a drop of water.
  3. Coat chicken pieces with salt.
  4. Carefully lower chicken wings into hot oil. Fry until chicken is caramel in color and crispy; about 10 minutes.
  5. Remove chicken from oil and drain on paper towels.
  6. Toss chicken in butter mixture until well coated. Remove and serve with blue cheese or ranch.

Oven Baked Tacos

Found this on Facebook. This taco recipe is the basic recipe using ground beef, beans, onions, tomatoes and cheese. These made 12 tacos, using corn tortilla shells. You can always substitute, ground chicken or ground turkey for the beef.

Ingredients

  • lean ground beef
  • black beans, drained and rinsed or 1 (15 ounce) can refried beans
  • medium onion, diced
  • (1 ounce) packet taco seasoning or 2 -3 tablespoons homemade taco seasoning
  • arlic cloves, minced
  • chunky salsa
  • hard taco shells
  • shredded cheddar cheese
  • (4 ounce) can black olives, roughly chopped
  • cherry tomatoes, cut in half

Instructions

  1. Preheat oven to 400 degrees.
  2. In a large skillet, heat oil and add onion and garlic – saute for about 5 minutes until soft. Add beef and taco seasoning, cooking until meat is browned. Add beans and salsa. Mix well and let cook for a couple of minutes so that the flavors can meld and the mixture can thicken.
  3. In a large 9×13″ baking pan, line up all the taco shells. Fill each one with a couple of scoops of the beef mixture and pack down into the shell. Repeat until all the shells are filled. Add olives and tomatoes.Top each taco with shredded cheese.
  4. Bake for 8-10 minutes (or until all the cheese is melted).
  5. Serve with your favorite taco toppings (tomatoes, lettuce, olives, sour cream, guacamole, pico de gallo , hot sauce, or whatever you like!).

Quick 'N Crunchy Potato Chip Chicken

  • sour cream and onion potato chips, crushed (1 cup)
  • parsley flakes
  • egg
  • Worcestershire sauce
  • vegetable oil

Instructions

  1. Mix crushed potato chips and parsley in shallow bowl.
  2. Beat egg and Worcestershire sauce in another shallow bowl.
  3. Heat oil in 10-inch nonstick skillet over medium-low heat.
  4. Dip chicken into egg mixture, then coat with potato chip mixture.
  5. Cook chicken in oil 10 to 12 minutes, turning once, until deep golden brown and juice of chicken is no longer pink when centers of thickest pieces are cut.

Cheesy Chicken Quesadillas

These are yummy, quick, easy and CHEESY :) You only need 4 ingredients to make these delicious pockets and they can be served as a main dish or as appetizers.

Ingredients

  • boneless skinless chicken breast, cubed
  • salt and pepper
  • condensed cheddar cheese soup, undiluted
  • chunky salsa or 1 cup picante sauce
  • 8-inch flour tortillas

Instructions

  1. Preheat oven to 425*.
  2. Sprinkle chicken with salt and pepper and cook in lightly greased skillet until cooked through and juices evaporate, stirring often.
  3. Add soup and salsa and heat through.
  4. Spread about 1/3 cup of mixture on half of each tortilla, leaving a 1/2 inch edge.
  5. Moisten edges with water, fold tortillas over and press edges to seal.
  6. Place on baking sheets.
  7. Bake 5 minutes.

Tuna-patty Burgers

Instead of plain ol' tuna-salad-sandwiches for lunch, try this variation. Also great when you need a light, fast dinner. This recipe easily cuts in half, to serve just 1 or 2.

Ingredients

  • (6 1/2 ounce) cans tuna in water, drained
  • eggs, beaten
  • carrot, scraped and finely grated
  • /4 cup italian-style seasoned dry bread crumb
  • reen onion, finely sliced
  • chopped flat leaf parsley
  • cayenne pepper
  • olive oil

Instructions

  1. In a mixing bowl, combine tuna, eggs, carrot, breadcrumbs, onion, parsley and cayenne; shape mixture into four patties.
  2. In a large skillet, heat olive oil over medium heat.
  3. Saute tuna patties for four to five minutes on each side; turn carefully as they easily fall apart.
  4. Serve on hamburger buns (really nice if toasted) with your choice of condiments; I recommend lettuce leaves and mayonnaise.
