Ingredients
- (12 ounce) package fettuccine
- /2 cup heavy cream
- egg yolks
- /2 cup grated parmesan cheese
- 1 1/2 lb ham, cut in julienne strips
Instructions
- Boil & drain noodles.
- Mix cream, egg yolks, & cheese in small bowl.
- Saute ham in butter.
- Add noodles to ham & blend well.
- Remove from heat.
- Add cream mixture & stir well.
Red Clam Sauce For Pasta

I have not yet tried this, but it is from an overdue library book (From Our Mothers' Kitchens) and I want to return the book tomorrow, so need to get the recipes I want to try copied down, pronto. I have always liked a white clam sauce, but this sounds like a great variation.
Ingredients
- /4 cup olive oil
- garlic, minced
- minced celery
- reen bell pepper, seeded and minced
- onion, minced
- (5 ounce) cans baby clams, drained and chopped
- tomato-based pasta sauce (homemade or your favourite from a jar)
Instructions
- In a heavy saucepan, heat oil over medium heat and cook garlic, celery, green pepper and onion, stirring often, until tender; this will take about 10 minutes.
- Stir in clams and tomato sauce, and bring to a boil.
- Reduce heat and simmer, for only a few minutes, just to let flavours blend.
- Serve over hot pasta; linguine is recommended.
Spanish-style Chicken Noodle Soup

Rachael Ray's Spanish twist on traditional chicken noodle soup.
Ingredients
- extra virgin olive oil
- celery ribs, chopped
- medium carrots, chopped

Instructions
- Heat olive oil in a large soup pot over medium-high heat. Add celery, carrots, onions,chili powder,and bay leaf, and season with salt and pepper. Cook for about 2-3 minutes and add chicken stock. Bring to a boil, add the orzo pasta and cook according to the package instructions adding the chicken pieces during the last 4-5 minutes of cooking along with the tomatoes, corn, and beans to heat through.
- Ladle a portion of soup in a bowl and garnish with sliced scallions and tortilla chips. Serve with time wedges to add a zip.
Gluten Free Turkey/chicken Noodle Soup

Perfect left-over turkey recipe. I use rice noodles to keep it gluten free but any wide noodle will do. Best soup I've ever made.

Instructions
- Saute onion, celery and carrot in olive oil until soft.
- Add chicken broth and cook until vegetables are tender.
- Add rice noodles and simmer about 5 minutes then add turkey and half of the parsley.
- Serve when turkey has heated through and garnish with remainder of parsley.
Mild And Creamy Macaroni And Cheese

A nice, mild mac 'n cheese, no sharp flavors here. Very creamy with the addition of baked tomato slices on top.
Ingredients
- elbow macaroni
- /4 cup butter
- /4 cup flour

Instructions
- Preheat oven to 375 degrees.
- Cook macaroni and drain.
- Melt butter in pan.
- Remove from heat and stir in salt, pepper and flour until smooth, making a light roux.
- Gradually stir in milk.
- Return to heat and bring to a boil, stirring constantly.
- Reduce heat and stir in 1 1/2 cups cheese.
- Add macaroni.
- Pour into 1 1/2 quart casserole.
- Arrange tomato slices on top, and sprinkle with remaining cheese.
- Bake for 15-20 minutes, until hot and bubbly.
Grilled Anti Pasta Salad

This is a very tasty salad to be served with any Barbecued dish - ribs, burgers , anything - just so good!!
Ingredients
- arge red onion, cut into 1/2 inch slices
- /2 cup olive oil
- kosher salt
- milled pepper
- white mushroom, left whole
- bell peppers, seeded and cut into chunks (red or yellow or orange)
- arge bunch asparagus, woody ends removed
- /2 cup red wine vinegar
Instructions
- Set onion slices on a plate, and brush both sides with olive oil. Season with salt and pepper. Set aside.
- Place remaining vegetables in a bowl, toss with remaining oil and sprinkle in salt and pepper. Mix well, ensuring everything is coated.
- Heat grill to medium. Place onion on one side of grill (it cooks better on its own); on the otehr, place remaining ingredients in a single layer, turning every 2-3 minutes, allowing the vegetables to caramelized.
- It may appear as though the vegetables are burning but a bit of charring add to the flavour. It might be hard to get them off the grill but it is well worth it!
- When vegetables are cooked, place in a large bowl; toss with red wine vinegar and fresh basil. refrigerate 1/2 hour before serving to allow the flavours to blend.

Stove Top Chicken And Spaghettini

Another wonderful and very tasty chicken dish! I have even added in green olives to this. The complete dish is prepared in an extra large frypan. If desired you can also mix in about 1/4 cup Parmesan cheese into the cream mixture while cooking.
Ingredients
- 6 boneless skinless chicken breasts, cut into cubes
- 4 tablespoons butter or 3 -4 tablespoons margarine
- minced fresh garlic (or to taste)
- arge onion, chopped
- tomatoes, chopped
- basil (or to taste)
- spaghettini, pasta (can use linguine also)
- 4 tablespoons dry white wine
- /4 cup good quality chicken broth
- half-and-half cream
- seasoning salt and pepper (or regular salt)
- /2 cup chopped fresh parsley
- rated parmesan cheese
Instructions
- Cook the pasta until just firm-tender; drain, toss with about a tablespoon of oil (to prevent sticking); set aside.
- Saute the chicken cubes in butter or margarine until almost done; transfer the chicken to a plate.
- Saute the onion and garlic until soft (not brown).
- Add in the chopped tomatoes and basil; cook stirring for 3 minutes.
- Pour the wine and chicken broth into the pan, bring to a boil, reduce heat and cook until reduced by about two-thirds.
- Stir in half and half cream, salt, pepper, and cook until slightly thickened.
- Add in the cooked chicken cubes (and all the juices that were left on the plate).
- Simmer for about 3-4 minutes.
- Stir in about 1/3 cup parsley; mix to combine.
- Toss/mix in pasta.
- Serve in large serving bowls.
- Sprinkle with grated Parmesan cheese.
- Delicious!

Cheesy Chicken Spaghetti

Tomato Chicken With Pasta

I adapted this recipe from one I found on a can of crushed tomatoes, and everyone loved it. You can scale the recipe in half, but you will probably want the leftovers. For the pasta, I recommend a curly pasta.
Ingredients
- boneless skinless chicken breasts, cut into 1 inch chunks
- medium onion, chopped
- (28 ounce) can crushed tomatoes
- (10 3/4 ounce) can condensed cream of chicken soup
- (6 ounce) can tomato paste
- (10 ounce) package frozen spinach, prepared according to package
- curly pasta, cooked according to package & kept warm
Instructions
- Cook chicken and onion over medium-high heat in a nonstick 6-quart saucepan until chicken is no longer pink.
- Blend in tomatoes and soup and heat through.
- Add hot pasta and spinach and blend.
- Season to taste.
- Note: Instead of heating everything on the stove, I put it in the oven for a few minutes.
Chicken Pasta With Apples And Walnuts

- Heat a large skillet over medium heat.
- Add 2 TB butter and melt.
- Add diced apple and saute until slightly browned.
- Add walnuts to apple mixture and cook for 5 minutes.
- Remove and set aside.
- In the same skillet, add remaining 2TB butter and saute chicken pieces until brown and crispy.
- Add apple/walnut mixture back in to chicken.
- Add thyme and black pepper.
- Pour in chicken broth and heat.
- Gradually add goat cheese and cook over low heat until cheese is melted.
- In a small measuring cup, add water and cornstarch and stir to get lumps out.
- On medium high heat, gradually add cornstarch and constantly stir until sauce is slightly thick.
- Serve over pasta of your choice.

Taco Pasta Bake

Gremolata Crusted Salmon Pasta Bake

- salmon fillet, skinned

- Method.
- Preheat the broiler to medium. Cook the pasta according to pack instructions.
- Heat the milk in a frying pan until bubbling, add the salmon and a little seasoning, and cover with a lid.
- Cook gently for 6-7 minutes or until just cooked through. Using a slotted spoon, transfer to a plate and keep warm, reserving the milk in the pan.
- Pour the cheese sauce into the frying pan and add the capers. Cook gently, stirring until very hot.
- Drain the pasta and add to the pan. Flake the fish into the pan.
- Toss the ingredients together until combined then tip into a shallow, heatproof dish.
- Mix together the garlic, lemon zest and parsley, and add the breadcrumbs.
- Scatter over the pasta bake and broil for 1-2 minutes until the breadcrumbs begin to colour. Serve with steamed green beans.
Corned Beef Noodle Casserole With Spinach And Cheese

- In the same medium saucepan, melt remaining 2 tablespoons butter over medium-low heat; stir in flour until well blended and bubbly. Stir in chicken broth and milk. Cook, stirring constantly, until thickened and bubbly. Add pepper and thyme. Stir in the cheese, cooking until melted. Add salt to taste. Pour sauce over the noodle and corned beef mixture; stir until well blended. Spoon the noodle mixture into prepared baking pan. If desired, top with crumbled French fried onion rings or buttered bread crumbs. Bake for 30 minutes, or until hot and lightly browned.
Mince And Spaghetti Casserole

Instructions
- Pulse tomatoes in food processor until coarsely ground and no large pieces, about 12 pulses.
- Heat oil in 12-inch nonstick skillet over medium heat until shimmering.
- Add onion and 1/2 teaspoon salt and cook, stirring often, until softened, 5-7 minutes.
- Stir in garlic and pepper flakes and cook until fragrant, about 30 seconds.
- Add ground meat and cook, breaking up meat with wooden spoon, until no longer pink, 3-5 minutes.
- Scatter pasta in skillet, then pour processed tomatoes over top.
- Cover, increase heat to med-high, and cook at vigorous simmer, stirring often, until pasta is tender, about 20 minutes.
- Off heat, stir in half of mozzarella and half of Parmesan.
- Season with salt and pepper to taste.
- Dot heaping tablespoons of ricotta over noodles, then sprinkle with remaining mozzarella and Parmesan.
- Cover and let stand off heat until cheese melts, 2-4 minutes.
- Sprinkle with basil and serve.
Pork And Noodle Casserole Ii

- Heat oil on medium high heat in a large skillet, add onions and saute for a few minutes. Lower heat to medium and add the pork and heat through.
- Meanwhile, bring water to boil in a medium sauce pan. Add the macaroni and cook according to package directions. Drain.
- When pork is cooked through add tomatoes and lower heat. Add spices and salt and pepper to taste. (Spice measurements are approximate--use however much you like.).
- While macaroni is still hot, add to the meat mixture. Add the cheese and stir. Serve.

Creamy Smoked Salmon Pasta

- all-purpose flour
- roasted garlic

- /2 cup mushroom (any kind, we used button mushrooms)
Instructions
- Bring a large pot of lightly salted water to boil.
- Add pasta and cook for 8-10 minutes or until al dente; drain.
- Melt butter in a large non-stick skillet over medium heat.
- Stir in crushed red pepper, allow it to season the butter.
- Saute onion in butter until tender, about 8 minutes.
- Add garlic in the last 2 minutes.
- Then, stir in flour; gradually stir in milk; whisking all the while.
- Check for seasoning.
- Heat to just below boiling and then gradually stir in cheese until the sauce is smooth.
- Stir in peas and mushrooms; cook over low heat for 4 minutes.
- Toss in smoked salmon and cook for 2 more minutes.
- Serve over pasta, a salad of greens, French bread and a bottle of wine.

Shrimp With Zucchini Noodles

Ingredients
- shrimp, peeled, deveined
- medium zucchini, spiralized
- 2 tablespoon olive oil
- 2 tablespoon salted butter
- Mrs. Dash seasoning mix, I like Garlic and Herb
- /2 teaspoon salt (to taste)
- /4 teaspoon pepper (to taste)
Instructions
- In a large skillet, heat oil and butter over medium heat.
- Place shrimp in an even layer, cook 1-2 minutes turn once, cook additional 1-2 minutes (just long enough for them to become opaque).
- Remove shrimp from pan, sprinkle with Mrs. Dash mixture. Set aside.
- In the same skillet add zucchini.
- Sauté zucchini noodles until they are tender, about 2 minutes.(These can be eaten raw, but I prefer a softer, more pasta-like texture).
- Sprinkle noodles with Mrs. Dash mixture.
- Add shrimp to noodles, gently turn mixture to disperse shrimp.
- Remove from heat, serve!
Spicy Shrimp And Pasta

I found the original recipe in an old (1990's) Southern Living Magazine. I changed a few things and tweeked a few things, and came up with this recipe. Hubby and I love it. I serve it hot, right out of the electric skillet with some crispy garlic bread.
Ingredients
- uncooked linguine
- unpeeled large raw shrimp
- butter or 4 tablespoons margarine
- medium sweet onion, chopped
- 3 cloves garlic, minced
- cajun seasoning or 1 tablespoon creole seasoning

- dry crushed red pepper
- /3 cup chopped fresh parsley or 2 tablespoons dried parsley

- Cook linguine according to package directions; keep warm.
- Peel and devein shrimp; set aside.
- Melt butter in a large electric skillet set on medium temperature.

- whole-grain linguine or 6 ounces fettuccine pasta
- cajun seasoning
- large shrimp, peeled and deveined
- canola oil, divided
- chopped onion
- chopped green bell pepper
- /2 cup thinly sliced celery
- chopped fresh thyme
- /8 teaspoon ground red pepper
- arlic cloves, minced
- /4 teaspoon kosher salt
- bay leaves
Instructions
- 1. Cook pasta according to package directions, omitting salt and fat. Drain in a colander over a bowl, reserving 1/3 cup pasta cooking liquid.
- 2. Heat a large skillet over medium-high heat. Combine Cajun seasoning and shrimp in a medium bowl; toss to coat. Add 1 tablespoons oil to pan; swirl to coat. Add shrimp mixture to pan; cook 2 to 3 minutes or until shrimp are done. Remove shrimp mixture from pan. Wipe pan clean with paper towels.
- 3. Add remaining 1 tablespoons oil to pan; swirl. Add onion, bell pepper, celery, and 1 tablespoons thyme; cook 5 minutes, stirring occasionally. Add red pepper and garlic; cook 3 minutes. Add reserved 1/3 cup cooking liquid, salt, bay leaves, and tomatoes; bring to a boil. Reduce heat, and simmer 5 minutes or until thickened. Discard bay leaves. Remove pan from heat; stir in shrimp and pasta. Stir in half-and-half. Cook 1 minute over medium heat or until thoroughly heated. Sprinkle with remaining 1 1/2 tsp thyme.
- Place all ingredients in your favorite serving dish and enjoy.

- In a large saucepan of boiling salted water, cook linguine.
- Meanwhile, in a medium saucepan, combine tomatoes, garlic and wine. Cook over medium high heat until liquid reduces by one third, 4-5 minutes.
- Reduce heat to medium. Simmer 3 minutes. Add paprika, salt and dill. Add cream, stirring continuously until heated through, 1-2 minutes. Do not boil.
- Drain pasta and place in a serving bowl. Toss with feta cheese. Spoon hot sauce over pasta and serve.

- Stir in wine and vinegar and bring to a boil. Cover and cook for 5 minutes or until tomatoes break down.
- Meanwhile prepare pasta according to package directions; drain; reserving 1 1/4 cups of the cooking liquid.
- Stir pasta into sauce along wiht 1/2 cup of the reserved liquid and 3/4 cup of the cheese; tossing over medium high heat until sauce coats the pasta;adding more liquid as needed.
- Pout in serving bowl and season with salt and pepper.
- Serve with remaining cheese.

- tomato paste
- /4 cup water
- olive oil
- 4 garlic cloves, minced
- whole wheat spaghetti
- salt (edit ( upped from 3/4!)
- 3 tablespoons wine or 2 -3 tablespoons water
- 2 teaspoon coarse black pepper, Freshly Ground
Instructions
- Put a large pot of salted water on to boil.
- Core the tomato, then roughly chop it. Add it to your blender, seeds, skin and all. Add cashews, tomato paste, and water. Blend until very smooth.
- Add olive oil to a large saute pan over medium-high heat. Add garlic and saute until golden, being careful not to burn. Once water is boiling, add pasta. Pour sauce from the blender into the saute pan and bring to a simmer. Add salt and let cook for 4-5 minutes, stirring occasionally.
- If desired add wine/water to thin out the sauce. Taste and season more if necessary. Let simmer until pasta is finished cooking. Once pasta is cooked, drain. Add pasta to the saute pan with black pepper and freshly chopped basil leaves. Toss to coat. Serve immediately, garnishing with more pepper and basil.

- fresh ginger, grated
- curry powder

- /3 cup dried lentils
Instructions
- Spray a large skillet with cooking spray. Heat over medium heat until hot. Sauté fennel and ginger 2-3 minutes; add spices and cook 1 minute longer.
- Add water and lentils to skillet; heat to boiling. Reduce heat and simmer, covered, until the lentils are just tender, about 15 minutes.
- Simmer uncovered until excess liquid is goner, about 5 minutes.
- Stir in chopped cilantro. Season to taste with salt.
- Place 1 tablespoon of the lentil mixture in the center of a wonton wrapper; brush edges with water.
- Place a second wonton wrapper on top and press edges to seal. Repeat with remaining wrappers and filling.
- Heat 3 quarts of water to boiling; add 4-6 ravioli.
